By drying, the agricultural products can be stored and transferred to the market throughout the year. One of the most important and nutritious vegetables is turnip which can be used by drying in out of season. In this research, the hot air and vacuum drying methods of turnip were compared. The effect of independent factors including temperature and vacuum, on dependent factors such as the shrinkage, rehydration and rate of electric energy consumption on final products of turnip were investigated. A randomized completely design for hot air dryer and a factorial experiment based on completely randomized design for drying under vacuum condition were used. Results showed that the temperature and vacuum have affected the shrinkage, rehydration and electricity consumption. Shrinkage parameter is more depend on the final humidity of product and the energy consumption of the devices depends on time. The best quality of dried turnip was achieved from hot air drying device with final humidity of 14±1%, shrinkage of 39.98%, rehydration of 4.45 and consumed electricity of 32.36 kWh kg-1 of DM in 60˚C. For the vacuum drying device the best quality of produce achieved with shrinkage of 38.12%, rehydration of 4.87 and consumed electricity of 30.58 kWh kg-1 of DM in vacuum condition of 10 kPa in 60˚C. Comparison of results showed that the vacuum dryer is more appropriate than the hot air dryers for drying turnip with better quality and lower power consumption.}, keywords = {Rehydration,Shrinkage,Vacuum drier,Turnip}, title_fa = {مقایسه دو روش خشک کردن بر مصرف انرژی و پارامترهای کیفی شلغم رقم سر ارغوانی}, abstract_fa = {خشک کردن یکی از قدیمی ترین روش های نگهداری محصولات کشاورزی است که بازار محصولات زراعی را وسیع تر کرده است. با استفاده از این روش می‌توان محصولات را با هزینه کمتر انبار و در تمام طول سال به بازارهای مصرف منتقل نمود. یکی از سبزی‌های مهم و مغذی که می‌توان با خشک کردن، خارج از فصل نیز استفاده نمود محصول شلغم‌ است. در این تحقیق علاوه بر خشک کردن شلغم، مقایسه دو دستگاه خشک‌کن هوای داغ و خشک‌کن تحت خلأ نیز انجام شد. اثر فاکتورهای مستقل دما و خلأ بر فاکتورهای وابسته نظیر چروکیدگی، آبگیری مجدد و انرژی الکتریکی مصرفی در محصول نهایی خشک شده بررسی شدند. طرح کاملاً تصادفی برای خشک‌کن هوای داغ و آزمایش فاکتوریل با طرح پایه کاملاً تصادفی برای خشک‌کن تحت خلأ استفاده شد. نتایج نشان داد فاکتورهای دما و خلأ بر چروکیدگی، آبگیری مجدد و مصرف انرژی الکتریکی تأثیر دارند. پارامتر چروکیدگی بیشتر به رطوبت نهایی محصول و پارامتر انرژی مصرفی دستگاه‌ها نیز به زمان وابسته است. در این تحقیق، بهترین کیفیت محصول خشک شده شلغم در دستگاه خشک‌کن هوای داغ با در نظر گرفتن رطوبت نهایی 1±14 درصد، چروکیدگی 98/39 درصد، آبگیری مجدد 45/4 و انرژی الکتریکی مصرفی 36/32 کیلو وات ساعت بر کیلوگرم ماده خشک در دمای 60 درجه سانتی گراد به دست آمد و برای دستگاه خشک کن تحت خلأ، چروکیدگی 12/38 درصد، آبگیری مجدد 87/4 و انرژی الکتریکی مصرفی 58/30 کیلو وات ساعت بر کیلوگرم ماده خشک در شرایط با خلأ 10 کیلو پاسکال، در دمای 60 درجه سانتی‌گراد به‌دست آمد. مقایسه نتایج نشان داد خشک‌کن خلائی با خشک کردن شلغم با کیفیت بالاتر و مصرف انرژی الکتریکی کمتر مناسب‌تر از خشک‌کن هوای داغ است.}, keywords_fa = {آبگیری,چروکیدگی,خشک کن خلأ,شلغم}, url = {https://jame.um.ac.ir/article_28340.html}, eprint = {https://jame.um.ac.ir/article_28340_a6a0dd7b66b136760eee328b1d38dd3c.pdf} }
