بهینه‌سازی فراسنجه‌های انرژی و حرارتی در فرآیند خشک‌کردن نشاسته اصلاح‌شده با پیش‌تیمار پلاسمای سرد

چکیده

یکی از مراحل مهم اصلاح نشاسته، بعد از اعمال تیمارهای اصلاحی، خشک‌کردن آن است. در فرآیندهای خشک‌کردن مواد غذایی، مصرف انرژی به‌عنوان یکی از فراسنجه‌های کلیدی و مهم موردتوجه قرار می‌گیرند. در این مطالعه اثر تیمارهای مختلف اصلاح نشاسته بر فراسنجه‌های انرژی و حرارتی فرآیند خشک‌کردن آن بررسی شد. پلاسمای سرد با استفاده از یک راکتور پلاسما با الکترودهایی از جنس مس و فولاد، در ولتاژ 20 کیلوولت، جریان 3 میلی‌آمپر و بسامد 50 هرتز و با بهره‌گیری از هوای اتمسفر تولیدشده و بر روی نمونه اعمال شد. در تهیه نمونه‌های نشاسته، آزمایش چندعامله در قالب طرح کاملاً تصادفی با عوامل دمای پیش ژلاتینه (55 و 60 درجه سانتی‎گراد)، زمان تیمار با پلاسمای سرد (30، 15 و 0 دقیقه)، و دمای خشک‌کردن نشاسته در آون (80، 70 و 60 درجه سانتی‎گراد) اجرا شد. محاسبۀ فراسنجه‌های انرژی و حرارتی در خشک‌کن جریان هوای گرم، بازده خشک‌شدن و انرژی حرارتی و گرمای مخصوص مصرفی به‌عنوان پاسخ‌ها محاسبه و بهینه‌سازی نتایج توسط نرم‌افزار دیزاین اکسپرت انجام شد. نتایج نشان داد دمای پیش ژلاتینه با سطح اطمینان (0.05>p) تأثیر قابل‌توجهی بر تمامی فراسنجه‌های موردنظر، یعنی بازده انرژی، بازده خشک‌کردن و بازده حرارتی داشت. در مقابل، دمای خشک‌کردن تأثیر معنا‌داری بر بازده انرژی نشان نداد؛ اما اثرات آن بر بازده خشک‌کردن و حرارتی معنادار ارزیابی شد. از سوی دیگر، تیمار پلاسما اثر کاملاً معناداری بر بازده انرژی و خشک‌کردن داشت؛ اما در مورد بازده حرارتی تأثیر قابل‌توجهی مشاهده نشد. این تحلیل نشان می‌دهد که تغییرات دمایی و تیمارهای مختلف بر فرآیندهای خشک‌کردن و مصرف انرژی اثرات تفکیک‌شده‌ای دارند که می‌تواند در بهینه‌سازی این فرآیندها موردتوجه قرار گیرد.
